Oatmeal doesn’t have to be sweet. This creamy oatmeal is rich in protein, fiber, iron, omega 3, and magnesium. The taste is slightly bitter, but you can sweeten it to taste.
The star of this recipe is the lupine bean. Lupine beans are the richest source of protein from legumes. 100g of boiled lupine beans contain 16g of protein, which is more than tofu with the same caloric content.
Ingredients
- 50g Oats
- 70g Apple, grated
- 10g Flax seeds, ground
- 100g Lupini beans, cooked
- 60g Nettles, blanched
- 15g Walnuts, toasted
- salt, iodized
- water
Instructions
- Blend cooked lupini beans into cream, add oats, ground flax seeds, and grated apple. Cook in water for approx. 5 minutes.
- I blanched the nettles in hot water for a minute, then cooled it in cold water and blended it into a smoothie. If you don't have nettles, use any dark green leafy vegetables such as spinach.
- Mix together the porridge and nettle.
- Top with toasted walnuts. Simply toast them on low heat on a pan.
