Fancy a savoury twist on your morning oatmeal? This savoury oatmeal recipe is inspired by Asian flavours, Pho!
️Deeply flavoured vegetable oatmeal is complemented by crispy tofu, and topped with a spicy peanut sauce.

Asian oatmeal with crispy tofu

Ingredients

  • Oatmeal:
  • 50 g Oats, Regular
  • 5 g Sesame Oil
  • 100 g Kale, Raw / Pak choi / Bok choy
  • 100 g Oyster Mushrooms, Raw
  • 10 g Green peas (or edamame beans)
  • 1/4 Black pepper, ground
  • 1/4 tsp Cumin, whole
  • 1 clove garlic
  • 90 g Firm Tofu
  • Hot peanut sauce:
  • 20g (1 Tbsp) Lemon juice
  • 15 g Peanut Butter, Unsalted
  • 1 Tbsp Tomato puree
  • 1/4 tsp Chili Powder
  • 1 tsp Soy Sauce, Low Sodium

Instructions

  1. Chop garlic and kale into fine pieces, and cut or tear oyster mushrooms into chunks of your liking. Cook oats covered in water with pepper, cumin, kale and oyster mushrooms for about 15 minutes, add water if necessary.
  2. While the oatmeal is cooking, heat a frying pan with a teaspoon of sesame oil. Meanwhile, cut tofu into 1.5 cm (1/2 inch) cubes. Then fry tofu in the heated pan until golden brown.
  3. Mix the lemon juice, honey, soy sauce, tomato puree and peanut butter in a small bowl. Add a splash of water if it’s too stiff.
  4. Pour oatmeal into the serving bowl. Top with crispy fried tofu and pour over with the spicy peanut sauce.

Notes

Instead of kale, you can also use pet-sai or bok-choy.
